Torta od svježeg sira s borovnicama



200 g glatkog brašna
110 g maslaca
70 g šećera u prahu
1 žumanjak
malo soli
ribana korica 1/2 limuna
Nadjev:
330 g posnog svježeg sira
3 žumanjka
110 g šećera u prahu
sok 1/2 limuna
300 g borovnica
1 čašica voćnog likera (od borovnica)
6 listova želatine
5 dl slatkog vrhnja
šećer u prahu za posip
papir za pečenje

Pećnicu ugrijte na 200°C. Od svih sastojaka za tijesto brzo umijesite prhko tijesto. Ostavite ga 2 sata u hladnjaku. Tijesto razdijelite u dva jednaka dijela pa, na radnoj površini posutoj brašnom, svaki istanjite valjkom u krug velik poput okruglog kalupa za tortu. Jedan po jedan razvučeni list tijesta prenesite na lim obložen papirom. Pomoću kalupa tek naznačite krug na tijestu pazeći da ga ne izrežete do kraja. Na nekoliko mjesta tijesto izbodite vilicom (vidi sliku) i svaku oblatnu odvojeno pecite 8 minuta do svijetle boje.

Dok je pečeni list tijesta još vruć, oprezno mu odrežite neravne rubove i ohladite. Ovaj postupak ponovite i s drugom oblatnom jedino je nakon pečenja i obrezivanja odmah narežite na 12 kriški. Borovnice pomiješajte s likerom i ostavite da se dobro prožmu. Donju, cijelu oblatnu položite na dno obruča (od kalupa). Za nadjev glatko pomiješajte pasirani svježi sir sa žumanjcima, prosijanim šećerom u prahu i limunovim sokom. U hladnoj vodi namočite želatinu. Od slatkog vrhnja istucite čvrsti šlag. Dobro ocijedite želatinu, otopite ju u malo vruće vode pa je zajedno s borovnicama i kremom od sira primiješajte šlagu (vidi sliku). Tim nadjevom napunite kalup, a površinu kreme lijepo poravnajte. Tortu ostavite u hladnjaku 4 sata. Zatim je oprezno oslobodite iz kalupa i prekrijte s 12 kriški koje ste obilno posuli šećerom u prahu.
Kolač do kraja prerežite vrućim nožem i poslužite.

Torta od jogurta sa šumskim voćem



Potrebene namirnice:

Piškota za popuniti kalup od promjera 24 cm
1 kg jogurta od šumskog voča
3 dl šlaga hopla, hole
7 listića želatine
450 gr šumskog voća
mlijeko za umočiti piškote
50 gr šećera

Priprema: U posudu staviti vode i namočiti želatinu. U drugu posudu istresti šlag i izmiješati ga mikserom da bude tvrd. Dodati šećer i vanil šećer, pomiješati. Dodati jogurt od šumskog voča i pomiješati. U to dodati namočenu i otopljenu želatinu( kako piše ne uputi) i lagano pomiješati. Piškote namočiti kratko u mlijeko i slagati na dno kalupa. Na piškote posložiti ocijeđeno šumsko voče i preliti smijesom od šlaga i jogurta. Staviti hladiti u frižider barem 3 sata te poslužiti.

Bavarska torta


Za tijesto:

240 g čokolade
50 g maslaca
5 žutanjaka
9 bjelanjaka
80 g šećera

Priprema: Pećnicu upalite na 180 stupnjeva. Čokoladu rastopite na pari te joj dodajte maslac i promiješajte. Žutanjke tucite s 20 g šećera dok ne posvijetle. Bjelanjke tucite sa 60 g šećera dok ne očvrsnu. U bjelanjke ručno umiješajte žutanjke, a onda i čokoladu. Ulijte u kalup namazan maslacem i pecite oko 30 minuta.

Krema:

250 ml mlijeka
100 g šećera
4 žutanjka
1 žlica Maraschina
nekoliko kapi ekstrakta gorkog badema
1 vrećica želatine u prahu
200 ml vrhnja za šlag

Priprema: Polovicu šećera stavite u mlijeko i zagrijavajte, a drugu polovicu šećera stavite u žutanjke i miksajte. Zatim smjesu jaja i šećera polako ulijte u mlijeko i kuhajte na laganoj vatri dok se ne zgusne. Kremu od jaja i mlijeka ostavite da se ohladi. Želatinu pripremite po uputama na vrećici, samo jednu žlicu vode zamijenite žlicom Maraschina. Slatko vrhnje istucite u šlag. Otopljenu želatinu umiješajte u tučeno slatko vrhnje, a onda sve skupa dodajte u kremu od jaja i promiješajte žlicom. Na pečeno tijesto izlijte kremu i ostavite u hladnjaku da se stisne i ohladi (obavezno preko noći). Tortu možete ukrasiti listićima čokolade ili kakaom u prahu..

Torta ferrero rocher

Tijesto:

100 g maslaca
100 g šećera u prahu
4 žutanjka
4 bjelanjka
130 g čokolade
1 žlica kakaa
1 vanilin šećer
70 g brašna
1 žličica praška za pecivo
malo soli
70 ml slatkog vrhnja
130 ml mlijeka

Krema:

400 g nutelle
400 g mascarponea
250 g prženih mljevenih lješnjaka (neki skroz usitnjeni, neki malo krupniji)
4 napolitanke (mljevene)

Priprema: Najprije pripremite tijesto! Umutite maslac i šećer mikserom, a na pari rastopite čokoladu. Zatim u smjesu od maslaca i šećera dodavajte žutanjke (jedan po jedan, između opet malo miksajte) pa ohlađenu čokoladu, kakao i vanilin šećer. Dobro izmiksajte! Dodajte brašno sa solju i praškom za pecivo. Lagano umiješajte (žlicom, ne mikserom) vrhnje, mlijeko i snijeg od bjelanjaka. Pecite na 180°C oko pola sata.
Kad se tijesto ohladi, izvadite ga iz kalupa i napravite kremu. Miksajte mascarpone, nutellu, lješnjake i mljevene napolitanke. Namažite tortu kremom i u slast!! :)

Trufle torta


Tijesto:

50 g maslaca
50 g šećera u prahu
2 žutanjaka
70 g čokolade
35 g brašna
1/2 žličice praška za pecivo
0.33 dl slatkog vrhnja
2 bjelanjaka
1/2 žličice soli
1 vanilin šećera
1/2 velike žlice kakaoa
0.6 l mlijeka

Krema:
0,4 l vrhnja za šlag
700 g čokolade
0,5 l vrhnja za šlag

Priprema: Pjenasto umutite maslac i šećer pa dodavajte jedan po jedan žutanjak. Zatim primiješajte otopljenu i prohlađenu čokoladu, kao i vanilin šećer. Sve dobro izmiksajte. Smjesi dodajte prosijano brašno s praškom za pecivo i solju. Lagano umiješajte vrhnje,
mlijeko te na kraju snijeg od bjelanjaka. Izlijte u okrugli kalup i na 180°C pecite oko 15 minuta. Izvadite tijesto iz pećnice i ostavite ga da se ohladi.


Priprema: Napravite kremu. 400 ml vrhnja za šlag prokuhajte. Čokoladu raskomadajte i zalijte vručim vrhnjem. Promiješajte i ostavite da se prohladi. Od vrhnja istucite šlag. Žlicom umiješajte šlag u čokoladnu kremu. Izlijte na tijesto, poravnajte i ostavite u hladnjaku da se dobro ohladi (najbolje preko noći).

Tiramisu torta



Sastojci

120 g brašna
220 g šećera
50 g maslaca
250 g svježeg krem sira
500 g maskarpone sira
750 g jagoda
4 jaja
malo soli
60 g gustina
4 žlice amareto likera
3 žlice soka od naranče
1 vrećica vanilin šećera
2 žlice kakaa
2 vrećice učvršćivača za šlag

Priprema jela:
Zagrijati pećnicu na 170-180 stupnjava. Rastopiti maslac i ostaviti ga da se phladi. Izmutiti jaja na pari, 150 g šećera i malo soli, pa kremu uz miješanje brzo rashladiti u posudi sa hladnom vodom. Dodati 100 g brašna i gustin. Na kraju umiješati maslac.

Oko 2/3 mase rasporediti po okviru za kolače (cca 26 cm) obloženom peki papirom i peći oko 30-ak minuta. Ostaviti da se ohladi. Obložiti pleh peki papirom. Ostatak mase za tijesto izmiješati sa 20 g brašna i nasuti ga u špricu za kolače sa okruglim otvorom. Istisnuti 20 okruglih pločica od tijesta po plehu i peći ih oko 10-ak minuta. Jagode oprati i isjeći na polovice. Izmiješati maskarpone, svježi krem sir, preostali šećer, vanilin šećer, učvršćivac za šlag i sok od naranče. Okruglu koru obaviti okvirom za kolače i poprskati je amareto likerom.

Poredati oko 3/4 jagoda. Premazati kremom i hladiti 2 sata.

Skinuti okvir za kolače i sa strane utisnuti okrugle pločice. Posuti tortu kakaom i ukrasiti preostalim jagodama.

Kokos torta




Sastojci:
8 bjelanjaka
8 žumanjaka
200 g šećera
230 g kokosa
6 žlica brašna
sok od pola limuna
200 g šećera
230 g maslaca

Priprema:

Kore:
Izmiješajte bjelanjke sa šećerom i sokom od pola limuna. Lagano umiješajte kokos i brasno. Ispecite tri kore u kalupu za torte.

Krema:
Na pari izmješajte žumanjke sa 200 g secera. Kad se ohladi dodajte 230g izmješanog maslaca i sve izmesajte u finu kremu. Kore poprskajte šećernim sirupom i namažite ih kremom.

Odvojite 7 bjelanjaka i istucite ih u čvrsti snijeg, a zatim umiješajte postepeno 150 g šećera.

Sameljite 100 g lješnjaka, dodajte 1 žlicu brašna i lagano umiješajte u pripremljeni snijeg.

Smjesu izlijte u kalup za torte (Ř 28 cm) čije ste dno prekrili papirom za pečenje i pecite u pećnici zagrijanoj na 180°C oko 20 minuta.

Na isti način s preostalim bjelanjcima, šećerom, lješnjacima i brašnom ponovite isti postupak još dva puta tako da dobijete 3 kore biskvita.

Za kremu sve žumanjke, puding i brašno promiješajte. Po potrebi dodajte malo mlijeka.

Preostalo mlijeko i šećer zakuhajte, odmaknite s vatre i umiješajte pripremljenu smjesu od žumanjaka. Vratite na vatru i uz miješanje kratko prokuhajte, pazeći da ne zagori.

Kremu ohladite uz povremeno miješanje, a zatim umiješajte razrađeni maslac.

Šlag pjenu uspite u 100 ml mlijeka i umiješajte u čvrsti šlag.

Pripremljeni šlag umiješajte u kremu, a zatim je podijelite na dva dijela. U jednu polovicu umiješajte tamnu čokoladu koju ste otopili na pari, a u drugu polovicu bijelu čokoladu.

Na biskvitnu koru stavite polovicu tamne kreme, zatim položite drugu biskvitnu koru, premažite je polovicom bijele kreme, zatim stavite treću koru.

Tortu premažite s ostatkom krema izvana i ukrasite lješnjacima.
Posluživanje
Tortu dobro ohladite i poslužite.

Savjet
Kako bi vam torta bila ukusnija, lješnjake popecite u pećnici, oljuštite ih, pa tek onda sameljite i koristite za tortu.
