Mutabel

700 g plavog patlidžana
0.25 šolje soka od limuna
0.25 šolje tahini (pasta od susama)
2 kašike maslinovog ulja
2 čena belog luka
2 kašike susama
biber

Priprema
Patlidžan oprati, izbockati viljuškom i staviti na nauljen kuhinjski papir u plehu za pečenje
Peći u rerni zagrejanoj na 200 stepeni C, oko 35 minuta
Povremeno okretati patlidžan dok ne omekša
Pečen patlidžan spustiti u hladnu vodu, a onda ga oljuštiti
Staviti sredinu patlidžana u blender, dodati sok do limuna, tahini, susam, iseckan beli luk i napraviti pire
Posoliti i pobiberiti po ukusu
Smesu izručiti u činiju srednje veličine i preliti maslinovim uljem
Držati u frižideru najmanje 3 sata, pa poslužiti

Sastojci:

12 sušenih paprika ili, po želji, svežih babura
250 g pasulja
veza zeleni
5 glavica crnog luka
2 čena belog luka
aleva paprika
peršun
so, ulje
Priprema:

Pasulj potopite, skuvajte (prvu vodu bacite). U drugu dodajte seckanu zelen i 2 glavice crnog luka i kuvajte s pasuljem. Na ulju propržite 3 glavice crnog luka, dodajte alevu papriku, pasulj i peršunov list. Posolite. Ovim filom punite paprike i poređajte ih u podmazanu vatrostalnu posudu. Prelijte vodom u kojoj se pasulj kuvao i svaku papriku prelijte s malo ulja. Stavite u zagrejanu rernu i zapecite.

1 ljuta paprika

Priprema
Luk iseči na kockice sitno, pa dodati pola šoljice ulja i pržiti da dobije staklastu boju, dodati isečenu papriku i malo ljute paprike po želji. Pržiti dok sve ne omekani, dodati paradajz, začin i pržiti jož 5-6 min i sataraš jegotov. P
