Certifikacijskoj kuci (koja ima ovlastenje za certificiranje) podnosi se zahtjev za pokretanje postupka certifikacije. Nakon nekoliko godina prilagodjavanja propisanim standardima pcelar dobije status ekoloskog pcelara a pcelinji proizvodi nakon provedenih analiza voska i meda dobija eko certifikat. On vrijedi samo za predmetni med, sljedece godine sve ispocetka. I da, u pravu ste- nase hrvatske certifikacijske kuce nemaju reference i reputaciju izvan Hrvatske. Najsigurniji ste ipak ako je certifikator poznata i priznata europska certifikatorska kuca.

Iznad 40 stC, MED više NIJE MED več se rastvara na jednostavne šećere i masti....

Razina HMF-a (Hydroxymethylfurfural) se povecava ako med zagrijemo preko 40 °C.Maksimalna razina HMF-a je 15 mg/kg
U hladno vrcanom medu prakticki ga nema.Razina se povecava skladistenjem i to 2-3 mg/kg na godinu.

Iako med sadrži više kalorija ,puno je slađi od šećera te ga treba poprilično manje da bi nešto zasladili. No, koristeći med duži period unositi ćemo manje kalorija u sebe i puuno više antioksidansa kojih u šećeru nema.

Šećer je saharoza, napravljena od dvije povezane molekule. Kada jedemo šećer, naš želudac koristi svoje enzime da bi razdvojio te molekule prije nego što naše tijelo uzme energiju iz šećera. Med je poprilično drugačiji. Pčele su dodale poseban enzim u nektar koji razdvaja saharozu, glukozu i fruktozu, pa naše tijelo to upija izravno.

Za razliku od meda, šećeru nedostaju minerali i vitamini. U šećeru se nalaze takozvane prazne kalorije koje utječu na pretilost i razne bolesti.

O okusu da i ne govorim...

Već duži period moj suprug i ja pijemo naše kavice zaslađene sa medom...isprva je bilo malo neobično, no sada niti ne pomišljamo na nešto drugo...

Pametni čika Steiner napisao je puno toga o medu...no o tomu nekom drgom zgodom...
