Zadani Recepti za kruh

vidjela sam na jednom mjestu da se pita za recept za kruh. pošto je ovo dio za izmjenu recepata evo meni najdražeg kruha:

400g raženog brašna
100g polubijelog brašna tipo 850
350ml mlake vode
pol žlice(jušne) soli
mala žličica šećera
1 vrećica kvasca(ja koristim rapunzel)

ja sve izmjesim u pekaču, ali pečem u pećnici na masnom papiru prvo na 240°C 20 min., a onda na 200°C 10 min.
probati čačkalicom dal je pečeno.
zatim ga izvaditi iz pećnice, umotati u vlažnu krpu(ne previše) i pustiti na rešetki 1 sat.
najviše volim ujutro ga pojesti s domaćim pekmezom od borovnica
njami

Zadani

integralni kruh s bučinim sjemenkama

50 g integralnog pšeničnog brašna
250 g integralnog raženog brašna
25 g svježeg kvasca
1,5 dl mlijeka
mlaka voda prema potrebi
1/2 žličice soli
100 g maslaca
2 žlice bučinog ulja
1 jaje i žumanjak
po prstohvat mljevenog anisa i kardamoma
150 g sjemenki buče
papir za pečenje
sjemenke buče za posipanje
Priprema

U mlakome mlijeku rastopite svježi kvasac, zatim dodajte još malo brašna pa dobivenu gustu tekućinu ostavite na toplome da uzlazi. U posudu za miješanje stavite obje vrste brašna, dodajte dignuti kvasac, bučino ulje, maslac, jaje, sol, kardamom, anis i mlake vode prema potrebi. Tijesto miješajte ručnim mikserom s nastavkom za tvrđa tijesta tako da nastane glatka i ne previše čvrsta struktura. Ostavite ga pokrivenog da odstoji 30 minuta.

Pećnicu ugrijte na 200°C. U dignuto tijesto umijesite sjemenke buče te tijesto još jednom dobro promijesite. Položite ga u duguljasti kalup za kruh obložen masnim papirom. Po površini pospite još sjemenki i malo ih utisnite u tijesto. Neka tijesto uzlazi još 20-tak minuta. Kruh pecite u toploj pećnici 45 minuta, zatim ga u kalupu ohladite. Prije rezanja ostavite da odstoji najmanje 2 sata, a najbolje je da ga ne dirate pola dana.

Kukuruzni kruh
Sastojci:
2 šalice grubo mljevenog kukuruznog brašna, 2 šalice prokuhane vode,
1 čajne žličice morske soli,
1 čajna žličica kukuruznog ulja,
1 šalica crnog pšenicnog brašna,
Kukuruzno brašno treba popariti s dvije šalice prokuhane vode. Pomiješajte sol, ulje i pšenicno brašno, i dodajte poparenom brašnu. Dodajte vode i napravite gustu smjestu, izliijte u tepsiju i pecite u zagrijanoj pećnici (180°) 30-40 minuta. Ohladite, izrežite na tanke ploške i poslužite.

VARIJACIJA:
Tijestu prije pecenja možete dodati nasjeckane pržene lješnjake.

KRUH NAŠ SVAGDAŠNJI

Kruh je nenadomjestiva namirnica. Kruha se ne možeš zasititi, kruh ti ne dosadi... Nećemo sad kritizirati pekarsku industriju nego ćemo ti dati jednostavan, isprobani recept za kruh od integralnih žitarica kojeg možeš umijesiti i bez daske za tijesto. Potrebna ti je oveća zdjela, jedna kuhača, nekoliko vrsta brašna, malo soli, mlake vode i suhog kvasca. Ne moraš imati preciznu kuhinjsku vagu nego sve ide onak, po seljački, od oka... Dakle: nebaviš/kupiš si po kilogram brašna od organski uzgojene pšenice, raži, pira, kukuruza... Dobro je miješati razna brašna. Raž kruhu daje sočnost, pa nek bude ravnopravno zastupljena. Inače brašna miješaš u skladu sa raspoloženjem i drugim okolnosima. Uglavnom, na 1 kg brašna (ukupno) ide 1 mala, vrhom puna žličica soli i ne baš cijela vrećica suhog kvasca. U zdjeli izmiješaš brašno, sol i kvasac. Potom ulijevaš mlaku vodu miješajući sve dok tijesto ne postane fino vlažno, lagano za obradu kuhačom. Tučeš, po starinski, da se sve što bolje jedno s drugim sljubi, a ti da se ne umoriš previše. Kad ti je dosta, pustiš tijesto da se diže barem dva sata. Možeš ga umijesiti uvečer i pustiti da stoji preko noći, pa peći ujutro. Neka se ohladi prije prvog rezanja.

Tijesto se obično visoko digne, zato je bolje da zdjela bude što veća. Kuhačom promiješaš, tijesto se lijepi za kuhaču, tako da moraš dodavati brašno da ga uopće možeš oblikovati u tijesto za kruh. Ne moraš pretjerivati u tvrdoći tijesta, bit će u redu kad se prestane lijepiti za prste (u zadnjoj se fazi mora malo mijesiti i rukama). U nauljeni i brašnom posuti kalup staviš tijesto, navlažiš površinu i prstima je zagladiš da ljepše izgleda. Površinu možeš ukrasiti sjemenkama suncokreta, bundeve, lana, sezama... Kad je vlažno sjemenke se lijepo zalijepe i ne otpadaju s pećenog kruha. Smiješ pustiti da se još malo diže, ali i ne moraš...

Pećeš oko jedan sat na srednjoj vatri. Da će uskoro biti gotov znaš po mirisu koji se širi... Provjeriš i tako da prstom utisneš gornju koru. Ako je čvrsta - vadiš ga iz pećnice. Odmah ide van iz kalupa i pušta se ohladiti.
To je najvažnije, sve ostalo su finese: umjesto vode možeš zalijevati biljnim čajem, dodavati razno zrnje i tijesto, oblikovati tijesto ovako ili onako itd.

Evo stavljam tu da ne začatam 'sirovu hranu'.

Recepti za spravljanje kruha, ali i pitanjce. Naime, zanima me da li imate iskustva spravljanja kruh(ova) u pekačima kruha? Navodno je tricky. A neki tvrde da je jeftinije tako nego u pećnici( što se tiče potrošnje struje).

Ja pečem doma kruh( ponekad). Stavljam raženo i crno brašno, i sjemenke prema volji( većinom lanene). I bude OK.

Ja sam pravila zemičke, nauljenim rukama, i onda ih uvaljam u neke tucane sjemenke po volji, ili mješavinom od suncokretovih sjemenki, lana, susama....


…a o zmajevom biseru ni rijeci!

Raženi kruh

7 šalica raženog brašna
1 žlica zrnatog suhog kvasca
1 šalica tople vode
2 žlice ulja
1 žličica morske soli
1 žlica kumina
topla voda

Otopiti kvasac u šalici tople vode. kada nabuja dodati ulje, kumin, sol i 6 šalica raženog brašna. Naliti toliko tople vode da tijesto bude mekano. Istući mješavinu kuhačom sve dok se ne počne odljepljivati od žlice i zdjele( ili izraditi mikserom). Pokriti zdjelu i staviti je na hladno mjesto da stoji 24 sata. Tada istresti tijesto na dasku i postupno dosipavati još jednu šalicu raženog brašna. Mijesiti i oblikovati grudu. Staviti u namašten zdjelu i premazati uljem. Pokriti i staviti na toplo mjesto da se diže. Kada tijesto naraste, izraditi ga na dasci kod se ne pojave mjehurići. Oblikovati tijesto u dva hljepčića( ili po želji) i staviti ih u namazanu tepsiju. Pokriti i stavitina toplo mjesto da se diže desetak minuta. Peći na laganoj vatri oko sat vremena.

Talijanska pogača

Tijesto:
1 i pol šalice pšenice
pola šalice raži
30 g kvasca
2 čaše jogurta
1 žličica morske soli
2 žličice kima
2 žličice korijandera
3 žlice maslinova ulja
50 g maslaca

Za posipanje:
2 česna češnjaka
3 žlice maslinova ulja
4 žličice usitnjenog suhog bilja( oigano, majčina dušica, bosiljak, prstovet ružmarina)

Žito sa začinima samljeti u fino brašno. Staviti brašno u zdjelu, posoliti, u sredinu napraviti udubinu i u nju naliti kvasac razmućen sa jogurtom, ulje i otpoljeni maslac. Zamijestiti gusto tijeto i izraditi dok se ne počne odvajati od zdjele. Pokriti tijesto i pustiti da se diže na toplom dok ne naraset dvostruko. Kada tijesto naraste, premijesiti ga, razvaljati ga na oblik tepsije staviti u okruglu tepsiju namazanu maslacem. Pokriti tepsiju, staviti na toplo da se tijesto digne i postane lagano, namazati tijesto protisnutim češnjakom, poškropiti uljem i posuti sjeckanim biljem. Staviti tepsiju u zagrijanu pećnicu i peći na jačoj vatri oko tri četvrt sata. Vrijeme pečenja ovisi o debljini tijesta. Vruća pogača ide odlično sa maslinama, maslacem ili ovčjim sirom.
