Zadani Prehrana bez glutena

Gotovo uopće ne konzumiram žitarice i zna mi biti problem kada poželim napraviti inačicu jela u koje ide bijelo brašno - primjerice kruh, biskvit ili palačinke.

Tražim recepte i isprobavam ih, a ujedno sama eksperimentiram.

Jučer sam napravila odlične bezglutenske palačinke, pa dijelim recept s vama. Palačinke nisu klasične, više liče na američe, malo su deblje - ali jako fine. Recept ću napisati niže, a ako netko od vas eksperimentira ili zna kakav dobar recept - veselim se razmjeni!

Palačinke bez glutena

2 jaja
4 žlice kokosova brašna (onog što se kupuje za kolače, pravo brašno je prilično skupo)
1 žlica mljevenih oraha ili lješnjaka ili badema
1 žlica sezama
2 dcl mlijeka
na vrh noža soda bikarbone
malo soli
malo meda
žlica ulja

Napravite snijeg od bjelanjaka i malo soli.
Žutanjke miksate s medom i žlicom ulja.
Kokosovo brašno, sezam i mljevene orašaste plodove ubacite u blender ili miksate štapnim dok ne dobijete brašno. Ja to radim u starom mlincu za kavu.
Dodate "brašno" i mlijeko žutanjcima, promiješate, dodate soda bikarbonu, pa sjedinite sa snjegom od bjelanjaka - ovo nemojte miksati, nego miješajte žlicom ili kuhačom.

Na tavici ugrijte malo masnoće na laganoj vatri (dosta je bitno da vatra bude lagana) i žlicom stavite hrpicu smjese pa je rastegnite - nemojte raditi velike palačinke jer ih nećete moći okrenuti, nego manje. Peku se duže od klasičnih, slobodno pogledajte ispod kako izgledaju i kada se lagano zarumene, okrenite ih i još malo zapecite.

Namazala sam ih pekmezom, nažalost kupovnim (domaći brzinski od jagode smo pojeli žlicom, pa ga je usfalilo) - i baš su bile fine.

Zadani Bezglutenski kruh

Bezglutenski kruh (prema LCHF)

Za one koji ne mogu zamisliti zivot bez kruha i bez sendvica evo recepta za odlican kruh bez brasna. Jedna gotova struca ovog kruha daje oko 30 kriski. Narezite ga i zamrznite pa ce vam dugo trajati. Kruh koristite stedljivo.


Napravite ”brasno” od :
200 g lanenih sjemenki (samljeti u mikseru)
50 g sezamovih sjemenki
50 g ljesnjaka + 50 g badema (samljeti u mikseru)
1 zlica psyllium praska ili 50 g zobenih posija
2 cajne zlicice praska za pecivo bez fosfata
zacine po zelji, npr cimet, kim
1 cajna zlicica (ravna) morske soli


Pomijesajte sa:
50 g rastopljenog maslaca
1 dl milerama ili punomasnog vrhnja
250 g zrnatog sira
6 jaja


Pomijesajte sve sastojke i izlijte u duguljasti kalup za kruh pokriven papirom za pecenje. Pecite 60-80 minuta, ovisno o pecnici, na 175 stupnjeva. Izvadite kruh iz kalupa i ostavite da se ohladi. Cuvajte ga u friziderau ili ga izrezite na tanke kriske i zamrznite.

Ako kruh podijelite na 25 kriski, mozete racunati da jedna kriska sadrzi 2 g UH.

Palačinke od zobenih pahuljica i banana

U blenderu usitniti pahuljice u brašno. Dodati vode i bananu.
Količina sastojaka prema želji
Ne treba dodavati šećer, banana je dovoljno slatka!

Unutra se može dodati još štošta. Narezane suhe datulje, kokosovo brašno. Ili zamijeniti zob s kukuruznim brašnom. Dodati pekmeza od smokava...

Hm, prica se po selu kako zob sadrzi gluten.
Za variva umjesto zaprske (ili kako se gdje vec naziva) pred kraj kuhanja se doda samljeveni kikiriki.


...ako tvoj brod ne pristaje u luci ti doplivaj do njega...

Pojasni malo ovo "umjesto jaja i mlijeka" pliz.

Umuti sol, brašno i mineralnu da izgleda kao smjesa za palačinke i pusti da odstoji možda 2 sata i peče.

Ali slobodno možete staviti i zamjenu za jaja (jogurt, lan, bananu)

Hehe, pa koristi med i sva ostala zdrava sladila, ne smeta joj ni žličica šećera, ali neće jer joj je super bez toga. Koristi bilo kakve alternativne slatke zamjene za premazivanje palačinki.
Svi su oduševljeni njenom linijom, ali ne shvaćaju da je to takav stil života.

Inače, što se tiče bezglutenske prehrane. Možete pripremiti kokosovo mlijeko od kokosovog brašna, i ono što vam ostane je skoro bezokusno brašno s kojim možete čak pripremiti i kakao muffine
